Recipe of the week : ” Cod & Green Beans Salad “

Recipe of the week brought to you by ” Sunset Breeze Restaurant”
This salad is perfect for lunch or for a light dinner meal! The cod is a great replacement for your usual canned tuna and green beans give the salad a nice crunch.
2 Cod Fillets (about 200-250g each)
250g green beans
200g boiled, peeled and roughly chopped potatoes (about 1-2 potatoes – you can also use canned potatoes if you’re lazy on a work night)
1 punnet Cherry tomatoes – halved
1 bunch green onions – sliced
2 soft boiled eggs (we recommend soft, but should you like it cooked more it also works)
Olive oil & Balsamic Vinegar
Sugar – pinch
Mustard – a teaspoon
Salt & Pepper to taste
- Prepare a pan with olive oil on high heat to cook the cod. Season with salt and pepper and sear the fish on both sides on high heat, then turn the heat down and let it cook through. Set aside to cool.
- Prepare a pan with olive oil and sauté the green beans until soft on the outside but still a bit crunchy on the inside. Season to likeness.
- Prepare the vinaigrette by mixing 2 tablespoons of vinegar with 1 teaspoon of mustard and a pinch of sugar, then take a whisk and incorporate the olive oil until you have a creamy vinaigrette. Season with salt and pepper to taste.
- Take to plates and place the green beans first, then the potatoes, the sliced green onion, with the tomatoes on the side. Place the cod fillets on top and the sliced egg on it, spoon the vinaigrette over this and serve!
